Grape harvest method and season
Second ten days of September – Manual harvest.
Vinification
Grapes are harvested, put into small boxes, and then passed through the press when still intact. Analcoholic
fermentation at almost 15° follows and lasts 4 weeks.
Sparkling process
Classic method. The base wine is fermented again in the bottle.
Two years of aging on the yeasts follow.
Organoleptic Characteristics
Alcohol 13-13,5% – Acidity8g/l
Shining light pink color. Perlage with a find and persisten grain.
Strong aroma with notes of rose petals, small red fruits, and a soft bread crust.
Softness is accompanied by a lively acidity. A pleasant taste of almond at the end.
